Amish Macaroni Salad

 

Black Bean Cakes

Ingredients:

4 c black beans
1 c finely chopped onion
1/4 c coarsely chopped cilantro
1 clove garlic, crushed
2 T lime juice
1 egg, lightly beaten (I used just the white, it worked)
2 T Red Hot Sauce (or more, to your taste)
salt and pepper to taste
flour for dusting
oil for frying

Directions:

Roughly chop 3 c of the beans in a blender or food processor. Add onion, cilantro, hot sauce, salt, pepper, and lime juice. Beat egg, then add and blend well. Heat a few T oil in a large skillet while making little patties of the bean mixture. Lightly dust with flour on each side, then fry. Cook 4-5 minutes on each side, serve hot with salsa or sour cream.
