Amish Macaroni Salad

 

Rum Cake with Chocolate Glaze

 
Ingredients:
 
One package Yellow cake mix
One package (3.4oz.) instant vanilla pudding mix
4 eggs
1/2 cup water
1/2 cup dark rum (preferably Myer's)
1/2 cup vegetable oil or canola oil
 
Method:
 
1. Grease and flour one tube pan.   Mix cake mix and pudding, eggs, water, rum and oil until very smooth.
2. Pour in the pan and bake in a 325 degree oven pre-heated for 15 minutes.
3. When finished, cool in the pan for 25 minutes and then invert onto a serving plate.  
4. ##### the top of the cake with a fork and then spoon and brush the glaze evenly over the cake and let it absorb the glaze.
5. When cool, drizzle the chocolate glaze over the cake.   Nuts are optional.
 
Rum Glaze:  One stick of unsalted butter, 1/4 cup water, one cup sugar, 1/2 cup dark rum.   Melt the butter in a pan, stir in the water and sugar then boil for 5 minutes and remove from the heat and stir in the rum.
 
Chocolate Glaze:   4 oz. semi-sweet chocolate chips or any other form of semi-sweet chocolate with 1/4 cup heavy crean and one tbsp. of unsalted butter.   Melt over a double broiler all ingredients until smooth.
